Pie "the Coffee symphony"
The most gentle pie for the same admirers of coffee and chocolate, as I. Thin kofejno-chocolate aroma cakes in a combination to an easy cottage cheese cream - a remarkable dessert.
Components for cakes:
Eggs - 8 pieces (5 yolks are used only, the others use at own discretion);
Coffee soluble - 4 spoons;
Water - 2/3 items;
Flour - 2 items;
Sugar - 1,5 items;
Baking powder - 1,5 spoon;
Salt - 1 spoon;
Flavourless vegetable oil - 1/2 items;
Vanilla - 1 spoon;
Dark chocolate-;
Lemon acid - 1/2 spoon
Components for a cream for the half-portion:
Cream of 35 % - 400 ml;
Cottage cheese - 1 pack (200g);
Sour cream - 100g;
Powdered sugar - 70g.
Way of preparation:
In the beginning it is necessary to bake kofejno-chocolate сhiffon biscuit. The word "Chiffon" in the name, probably, reflects that the biscuit turns out surprisingly gentle, air, as a sponge. I prepared dough from half of norm. Therefore and components for a cream are given for half of portion. On full norm the quantity of a cream needs to be doubled.
We prepare a biscuit. Coffee to make in hot water (at me my favourite dessert fragrant coffee). Chocolate to crush (it is possible a knife or on a grater).
In the big cup we mix a flour, sugar, salt and a baking powder.
In the centre of a hill of a flour mix we do deepening and we pour out vegetable oil, yolks (from 4 eggs I used 3 yolks), coffee and vanilla.
Well we knead.
We add grated chocolate and it is once again kneaded.
In a separate cup (dry and without fat traces) we shake up fibers with lemon acid to steady peaks (when we overturn a cup sideways, they should not drop out of it). We add fibers in dough.
Accurately we mix dough a shovel so not to expel air from fibers.
We cover a bottom of a baking dish parchment. We pour out dough.
We bake in the oven which has been warmed up to 180 degrees, minutes 60 - 70.
We take out and is cooled in shape.
After cooling it is cut cake on 3 layers.
The biscuit turns out very soft, damp, with delicate aroma of coffee and chocolate.
We prepare a cream.
Cottage cheese is mixed with powdered sugar and sour cream and we punch a blender before reception of homogeneous weight. The cream turns out not strongly sweet if love is more sweet, increase quantity of powdered sugar.
Cream it is shaken up in separate ware to soft peaks.
Accurately we connect a cottage cheese mix to whipped cream.
The cream is ready. We smear with a cream the first cake.
We spread from above the second cake, we cover with a cream, from above the third. All pie we cover with a cream and we level a knife.
We decorate at will. At me from above it is strewed cocoa and along the edges - chocolate crumbs.
